Reply:depends on what you're doing with them. i prefer chipoltes for longer cooking dishes and habeneros for raw dishes, sweet dishes, or quickly cooked ones. serranos and new mexicans are sentimental favorites of mine, but i don't use them for everything either.
Reply:2. I love the smokey sweet heat of chipotles. I freeze any unused adobo sauce to add to barbecue sauce later. Yumm.
