EXCEL...i am working on a survey....how can i create DYNAMIC TABLES for tabulating results?

Pivot tables, then refresh the data when necessary. You may have the data automatically refresh upon entry. Rather than copy all of the EXCEL help files here, go there and type in "pivot tables".
